Chocolate, Almond & Coconut Bars

This healthy chocolate slice recipe is rich, delicious and such a simple thing to make. A perfect, easy kids treat or adult chocolate fix!

The almonds provide mood and energy elevating proteins, minerals and fats. The coconut and oil is amazing for brain, immune and metabolic health. This is a whole food treat that is very satisfying and tastes amazing!


Chocolate, Almond & Coconut Bars


INGREDIENTS

300g (2 1⁄2 cups, firmly packed) almond meal

80g (1 cup approx.) shredded or desiccated coconut

130g (1⁄2 cup) nut butter

4 tablespoons sweetener (rice malt syrup, honey or maple syrup)

100g (1⁄2 cup) extra virgin coconut oil

1 tablespoon vanilla powder, extract or essence

1 tablespoon coconut flour

100g of 85% cocoa chocolate, broken into pieces or 100g of raw chocolate


Line a 20 x 30cm slice tin with baking paper.

Mix all ingredients (except the chocolate) together in a food processor until well combined and forming a rough paste.

Pour into the slice tin.Refrigerate until set (about an hour).

Once set, melt the chocolate in a bowl placed over a potof simmering water, stirring continually. Spread evenly with a spatula over the almond mix and refrigerate again until the chocolate is just set (10 minutes).

Remove from the tin and slice into small bars with a large sharp, wet knife.


MAKES A 20 X 30CM SLICE

VARIATIONS

Low-fructose

Choose rice malt syrup as your sweetener.

Dairy-free or vegan

Choose raw chocolate for the top.

Nutella like

Swap the almonds for ground hazelnuts and use hazelnut butter fora match made in heaven.

STORE

In the fridge for a week or freeze for up to3 months. As with any raw coconut oil based product, they’ll melt

if not kept cold!
